紅 葡 萄 品 種Cabernet Franc(first row left)屬 於 早 熟 的 葡 萄 ， 果 粒 小 小 、 酸 酸 ， 有 一 種 很 特 別 的 礦 物 氣 味 ， 單 寧 和 酸 度 含 量 較 低 ， 適 合 在 較 冷 的 氣 候 生 長 。 主 要 用 來 和 Cabernet Sauvignon 和 Merlot 混 合 ， 製 成 的 紅 酒 ， 氣 味 有 點 淡薄 ， 有 不 少 草 香 系 的 氣 味 ， 入 口 酸 度 相 當 高 。Cabernet Sauvignon(first row right)是 全 世 界 最 受 歡 迎 的 黑 色 釀 酒 葡 萄 ， 生 長 容 易 ， 適 合 多 種 不 同 氣 候 。 釀 製 出 來 的 葡 萄 酒 是 最 強 烈 、 最 飽 滿 、 最 複 雜 的 。其 氣 味 主 要 是 厚 重 濃 郁 的 果 香 系 、 木 香 系 或 香 料 系 。 此 外 ， 不 同 產 區 亦 會 生 產 出 香 草 、 李 子 、 茴 香 、 巧 克 力 、 檜 木 、 皮 革 、 橡 木 等 味 道 。Gamay(second row left)其 釀 成 的 酒 顏 色 是 淡 紅 色 ， 味 道 清 淡 ， 酸 度 很 重 ， 單 寧 含 量 非 常 低 ， 口 感 清 淡 ， 富 含 新 鮮 果 香 。 不 適 久 存 ， 簡 單 易 飲 ， 屬 於 酒 齡 年 輕 時 即 喝 的 葡 萄 酒 。Merlot(second row right)果 粒 小 、 果 皮 薄 ， 單 寧 酸 與 酸 度 也 較 低 ， 而 單 寧 質 地 則 較 柔 順 ， 口 感 以 圓 滑 厚 實 為 主 ， 酸 度 也 較 低 ， 極 適 久 存 陳 年Pinot Noir(third row left)屬 早 熟 型 ， 產 量 少 且 不 穩 定 ， 適 合 較 寒 冷 氣 候 ， 於 石 灰 黏 土 的 生 長 表 現 最 佳 。 顏 色 是 淡 紅 色 或 正 紅 色 。 氣 味 是 不 濃 不 淡 的 果 香 系 與 花 香 系 。 常 見 的 是 櫻 桃 、 莓 果 、 梅 子 、 黑醋 栗 、 香 料 、 玫 瑰 花 、 或 其 他 花 香 。 入 口 的 感 覺 相 當 柔 順 溫 淡 。 有 點 酸 ， 但 不 澀 、 單 寧 酸 很 很 少 。除 紅 酒 外 ， Pinot Noir 經 直 接 搾 汁 也 適 合 釀 製 白 色 或 枚 瑰 氣 泡 酒 ， 是 香 檳 區 的 重 要 品 種 之 一 ， 多 與 Chardonnay 及 Pinot Meunier 混 合 ， 較 其 他 品 種 豐 厚 且 適 陳 年 。Syrah(third row right)酒 色 深 紅 近 黑 ， 氣 味 是 很 濃 郁 沉 重 的 香 料 系 、 果 香 系 、 跟 木 香 系 的 香 味 ， 酒 香 濃 郁 且 豐 富 多 變 ， 口 感 結 構 緊 密 且 豐 厚 ， 單 寧 含 量 驚 人 ， 抗 氧 化 性 強 ， 非 常 適 合 久 存 陳 年 ， 飲用 前 須 經 長 期 橡 木 桶 及 瓶 中 保 養 。
